Chicken Gumbo

- 1⁄4 cup vegetable oil
- 2 tablespoons vegetable oil
- 1⁄4 cup flour
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 stalks celery, chopped
- 2 garlic cloves, minced
- 2 cups cooked diced chicken
- 1 lb spicy smoked sausage
- 500ml chicken broth
- 400 g can of tomatoes
- 3 Bay Leaves
- 2 -3 tablespoons cajun seasoning, to taste
- or
- ¼ tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp ground Cumin
- 1 tsp dried theme
- 1 tsp sage
- 1 dash hot pepper sauce
- 2 -3 tablespoons gumbo file
- Heat the oil in a large pan over a medium high heat.
- Add the chicken and cook for about 5 mins to brown all over.
- Remove the chicken with a slotted spoon and set aside.
- Add the onion, green pepper and celery to the pan, put on the lid and cook for 5 mins, stirring occasionally until softened a little.
- Return the chicken and any juices to the pan with the flour, stirring to coat everything.
- Pour in the tomatoes and stock, finally add spices and bring to the boil, cook for 5 mins
- Then add the okra.
- Turn down to a simmer, put on the lid and cook for 10 mins.
