225 g Quinoa 30 mL Virgin Olive Oil 125 mL Diced Carrot 125 mL Diced sweet red pepper 2 cloves garlic minced 10 mL ground cumin 30 mL chopped Parsley 2 mL salt
Ingredients
225 g Quinoa
30 mL Virgin Olive Oil
125 mL or 2 Diced Carrot
125 mL or 1 Medium Onion
125 mL or 1 Diced sweet red pepper
2 cloves garlic minced
10 mL ground cumin
30 mL chopped Parsley
2 mL salt
Instructions
Bring 500 mL H20 to boil, stir in Quinoa, reduce to low simmer covered for 15 minutes
Remove from heat let stand 5 minutes then fluff with fort
Heat Oil on meduim high heat, add carrot, onion, pepper, garlic, cumin cook for about 10 minutes stir in quinoa add parsley and salt
Server hot or cold
