Hollandaise Sause for two
Ingredients
  • 90 ml of clarified butter
  • 2 egg yolks
  • 10 ml cold water
  • 15 ml lemon juice
  • salt
  • cayenne
Instructions
  1. Wish eggs and water with a few drops of the lemon juice
  2. Double boil eggs water, and lemon juice mixture until think and creamy
  3. Remove from heat and add warm clarified butter a few drops at a time whisking constantly
