Hollandaise Sauce

- 90 ml of clarified butter
- 2 egg yolks
- 10 ml cold water
- 15 ml lemon juice
- salt
- cayenne
- Wish eggs and water with a few drops of the lemon juice
- Double boil eggs water, and lemon juice mixture until think and creamy
- Remove from heat and add warm clarified butter a few drops at a time whisking constantly
