Blender Lemon Pie

- 1 whole lemon washed and quartered
- ¼ C water
- 1½ C sugar or less to your taste
- 4 eggs
- 6 TBsp butter
- 1 deep dish pie shell (homemade or bought)
- In a blender, blend lemon with water. Add all other ingredients and blend well.
- Pour into a deep dish pie shell and bake at 350 to 375 for 30 to 40 minutes.
- Serve with whipped cream.
