Ingredients
  • 5 cups water
  • 2 tbsp honey
  • ¼ cup lard
  • 1 tbsp salt
  • 9 to 10 cups flour (I use 1 cup rye flour, 1 or 2 cups whole wheat, and 1 cup masa flour and remainder is white flour - or any combination of flours is OK.
  • 1 tbsp of freshly ground flaxseed.
  • 1 large Tbsp fermipan yeast
Instructions
  1. Heat 3 cups water just enough to melt the honey, lard, and salt. Remove from heat and pour into large bowl and add remainder of water. Add about 2 cups of flour and stir with whisk. Add 1 more cup flour and sprinkle yeast over top of flour and stir. About now you might have to get your hands in. Keep adding flour and mixing and kneading until bowl and your hands are clean. Cover with plastic bag and allow to rise - about 1 to 2 hours. punch down and cover again and allow to rise until double or so again. Punch down again and make into loaves and place in pans - should make 5 loaves. allow to rise until just above pan Then Bake at 350 40 to 45 min or until golden brown on top.
