Multi Use Pancakes

Serves: 2 to 4
- 120 to 125 g (1 cup) multigrain flour or some other ratio like 60 g white and 60g multi grain see below for more ideas
- 5 g (1 tsp) baking powder
- 5 g (1 tsp) baking soda
- 2 g (pinch) salt
- 12 to 24 g (1 to 2) TBS brown sugar
- 5 mL (1 tsp) vanilla
- 250 mL (1 cup) buttermilk ( make ur own see below ) or 125 mL (1/2 cup) yogurt and 125 mL (1/2 cup) milk
- 1 or 2 eggs i like 2 these days
- A Great option is to add up to 250 mL (1 cup) of Fruit or Chocolate and nuts with a banana or 2
- Mix flour(s), baking soda, baking powder, salt in medium bowl, create a well in middle of bowl
- Wisk sugar, eggs, milk mixture vanilla
- Carefully fold wet and dry ingredients using the well try for no more than 50 strokes!

- Freestyle one: Make your own buttermilk ¾ Cup of milk and 2 Tbsp Vinegar
- Freestyle 2: omit sugar adding 1 C frozen mixed vegetables,add extra salt and pepper.
- Cornmeal cakes: ½ white ¼ whole wheat ¼ cornmeal 1 cup frozen corn
