Humming Bird Cake

awesome birthday cake with great topping
Ingredients
  • 3 C flour
  • 2 C sugar
  • 1 tsp salt, cinnamon, and baking soda
  • 3 lg eggs slightly beaten
  • 2 C mashed ripe bananas
  • ¾ C oil
  • 1½ tsp vanilla
  • 1 can crushed pineapple include juice
  • 1 cup chopped pecans (can be toasted) Topping 16 oz cream cheese softened, 1 C butter, and 2 lbs confectioners sugar ( I just added until it looked right) 2 tsp vanilla and remaining chopped pecans
Instructions
  1. In lg bowl combine dry ingredients add eggs, bananas, oil, pineapple and vanilla - beat - stir in ¾ cup pecans
  2. Pour into 3 round bkg pans- (spring form pans are best )
  3. bake at 350 25 to 30 mins or until done - Cool 10 min or longer then remove to wire racks and cool.
  4. To Frost combine ingredients and beat til smooth
